If rich, gooey, succulent cheese sounds like your thing, then you need to get yourself to Sublime Ale House in San Marcos, California as soon as possible. Sublime Ale House is located in Old California Restaurant Row off of San Marcos Boulevard and is quickly becoming one of the most sought after restaurants of the development.

Sublime Ale House is located at 1020 West San Marcos Boulevard and you can reach the restaurant by phone at 760-510-9220.

Expect a wait for a table on weekend nights, but thanks to a texting service, you don’t have to wait within the lobby of Sublime; you’ll get a text once your table is ready. Sublime also has a sister restaurant called Sublime Tavern located in Del Mar. 

Sublime Ale House in San Marcos 

Enter Sublime Ale House and you’re in a laid back establishment with urban loft-style décor. Exposed beams in the ceiling, bricks, and gleaming wood tables create a trendy, hipster setting while the layout still manages to be both family friendly and ideal for groups of adults.

The square bar, which serves up a large list of craft beers and a selection of wine, is situated toward the center of the space with picnic style bar tables to its left. This is open seating while the rest of the tables around the bar and restaurant are for seated dining by the host or hostess.

Sublime Ale House’s claim to fame is its macaroni and cheese menu.

It is made with béchamel cheese and topped with Parmesan bread crumbs, which when baked to perfection in Sublime’s oven, gives the top layer a crispy edge. Beneath that top crust are mounds of elbow macaroni, decadent melted cheese and your choice of other ingredients.

Though you can create your own macaroni and cheese by picking and choosing from Sublime’s extensive toppings list, there are signature creations that sound so good, you’ll probably end up trying one of the restaurant’s creations – after all, they know what they’re doing when it comes to macaroni and cheese.

Try the Infatuation, which mixes in truffle oil and wild mushrooms (I especially like this one with ham and tomatoes added) or the Ecstasy, which comes with gorgonzola béchamel, bacon, mushrooms, red pepper, garlic, and thyme. The namesake macaroni and cheese, the Sublime, is also a huge hit with roasted chicken, mushrooms, Applewood smoked bacon and truffle oil.

Sublime Ale House also has a grilled cheese menu, which features house-made bread, a variety of cheeses and a crispy Parmesan crust. You can choose the basic four cheese grilled cheese, which is made with cheddar, gruyere, Monterey jack and gouda, or you can opt for adding more adventurous toppings like meatballs, jalapeno poppers, roasted garlic, prosciutto or a variety of other ingredients.

Sublime also has pizza and burgers. The burger patties are made from three different cuts of meat that are all ground up fresh in-house. Just like the macaroni and cheese and grilled cheese, there are a variety of toppings you can choose for your burger, from staples like bacon and avocado to more daring toppings such as spinach dip or eggs. The pizzas are made with dough that is created in-house. Signature pizzas include creative pies like the Get Figgy Wit It, which has figs, prosciutto, balsamic glaze, arugula, parmesan, olive oil, and garlic.

Meat lovers will enjoy the Gratitude pizza, which comes with house-made meatballs, artisanal sausage, and pepperoni.
