Here are a few locations that traditionally offer Easter brunch. Most of them require or at least suggest reservations. I also suggest that you call to confirm pricing and what will be offered on the buffet, because they often don't have the exact items that will be offered when I call. In most cases, I've listed general things that are offered year after year.
Typically, most hotels offer Easter brunch and quite are listed below. Many local hotels make super brunch buffets that can outdo any of the local restaurants as far as value, variety and quality. It's also usually a little easier to get in without a reservation at a hotel. The Wyndham in Little Rock is a good choice if you want a nice value in a buffet.

Wyndham Riverfront is hosts brunch from 10:30 a.m. to 2 p.m. and is located at 2 Riverfront Place in North Little Rock. The Wyndham serves a traditional Easter meal and omelet and waffle stations. The cost is around $20. Call 501-907-4826.

Ya Ya's hosts brunch from 10 a.m. to 2 p.m. and is located at 17711 Chenal Parkway. On Easter, they host their typical brunch buffet with a few added extras. They have pizza, waffle and omelet bars, fresh meats, a pasta station and desserts. Holiday brunch is typically around $30. This one is usually pretty crowded and popular with locals. 501-821-1144

The Capital Hotel
One Eleven at the Capital normally offers a Easter brunch menu. Their menu is upscale Southern themed with buttermilk biscuits, sausage and gravy, omelets and lighter fair like frittata, eggs Benedict (with a nice Hollandaise), shrimp and grits and more. South on Main

The Arlington Hotel
The Arlington Hotel hosts brunch from 10:30 a.m.-2 p.m. and is located at 239 Central Ave. in Hot Springs. The Arlington hosts a great brunch with carving stations, desserts, an omelet station and the Easter Bunny. The hotel is a beautiful, historic hotel and a great backdrop for Easter. Loca Luna hosts Sunday brunch from 11 a.m. to 2:30 p.m. They are located on 3519 Old Cantrell Road. There's no buffet, and they serve their normal brunch menu which includes crab cakes, crawfish-shrimp etouffee, savory shortcake, flat breads and salads, sandwiches, biscuits and gravy, eggs Benedict, breakfast burritos, pizzas and more.
