If you have not had a Cazuela you owe it to yourself to have one by the pool or if you are in need of that feeling you get when you sit by the pool and all your worries seem to fade away. It's refreshing, it's light and the right amount of fruit really transports you to a white sand beach where the water is warm and the drinks are cold. Make sure to use Reposado Tequila as it really helps the flavor along.
There are plenty of variations on the Cazuela recipe, this one is one I sampled while involved in a tequila certification course with the Consejo Regulador del Tequila (Tequila Regulatory Council) at Dos Camino Las Vegas at the Palazzo Resort, Hotel and Casino on the Las Vegas strip. (Dos Caminos in now closed)

1 slice of lime

Grapefruit flavor soda (Squirt or Fresca) Muddle the fruit, add the tequila and shake with ice.
Top with grapefruit flavor soda. Serve over the rocks.
If you are tempted to try a few Tequila drinks with some Mexican cuisine there are a few spots on the Las Vegas strip where you can fulfill your desires. Javier's at Aria Las Vegas has a large inviting bar that does cocktails quite well. In fact, the cocktails might distract you from the food.
That would be a mistake, grab a table get a few items you can share and dabble in a Tequila tasting.
Check out Hecho in Mexico at MGM Grand, Chayo at The LINQ and China Poblano at Cosmopolitan for a few more excursions into the Tequila cocktail world in Las Vegas. Do keep in mind that if you seek out good, cheap, authentic tacos there really is only one place to go and that would be Tacos El Gordo right on the Las Vegas strip.
(You may have heard that they closed but they are back by popular demand!) Unfortunately, they don't serve tequila so your tacos will have to be enjoyed sober.
